Ingredients

1/2 c tahini

1/4 c unsalted roasted peanuts, finely chopped

1 1/2 Tbls rice-wine vinegar

1 t chile powder

1 t grated ginger

1 clove garlic, minced

1 1/2 Tbls soy sauce

1 t sugar

1 1/2 Tbls lime juice

1 1/2 Tbls chile oil

2 Tbls sesame oil

1/4 t cayenne pepper

1/2 t salt

1 pound udon noodles

1 Tbls toasted sesame seeds

Preparation

Place all ingredients, except noodles and sesame seeds in a blender add 6 Tbls water, puree till smooth.

Boil noodles in 1 Tbls salt 7-8 min. Drain & rinse in cold water.

Transfer to bowl, pour mixture and toss to coat. Sprinkle with sesame seeds and serve.
