1/2# Kosher Salt
4oz Sugar
1/2T. Onion Powder
Optional
3/4t. ground clove
3/4t. ground bay leaf
3/4t. ground mace
3/4t. ground allspice
Preparation
combine all ingredients in cure,place salmon in hotel pan and sprinkle cur cover entire surface, refrigerate 12-14 hour, gently rinse cure off, refrigerate over night uncovered, cold smoke 1-2 hours
