Ingredients
8 ounces cooked noodles (pasta or soba or rice)
2 poached chicken breasts shredded
1/2 seedless cucumber, sliced thinly
1 jalapeno pepper seeded and minced
3 hard boiled eggs, sliced
1 green apple, cored and thinly sliced
1/2 cup cilantro or parsley, minced
1/2 cup minced scallions
1 cup rice vinegar or white vinegar
3 T sugar
Preparation
Place the first eight ingredients in a deep bowl.
Mix the vinegar with the sugar.
Dress and serve cold. A nice hot sauce can be served with it to add a little more kick.
