Ingredients

Dressing

6 tbsp of rice vinegar or white wine vinegar.

6 tbsp of vegetable oil

5 tbsp of peanut butter

3 tbsp of soy sauce

3 tbsp of brown sugar

2 tbsp of chopped ginger

11/2 of minced garlic

Ingredients

1 green cabbage thinly sliced

1 red cabbage thinly sliced

2 red peppers cut into strips

2 carrots, peeled and cut into strips

8 scallions

1 cup of coriander

1 cup of mints

Preparation

Whisk all of the dressing ingredients from vinegar to garlci in a bowl and blend well. Combine the remaining ingredients in a large bowl and about one hour serving add the dressing and toss to coat. Season with salt and pepper.
