Ingredients
Colette’s Chicken Chili
2 lbs of ground chicken
1 can of dark red kidney beans
1 can of black Beans
1 can of white beans
1 small can of corn (optional)
1 jar of salsa
1 can of tomato soup
1 small sweet onion (optional)
1 small green bell pepper (optional)
½ cup poultry seasoning
2 tablespoons of oil
Preparation
Brown ground chicken in a large pot in oil with poultry seasoning Once chicken is browned add pepper and onion if using in recipe and cook until onions look clear/cooked. Add tomato soup and salsa to mixture Add all cans of beans
Let boil for 20 minutes and then lower heat and simmer for half hour to an hour or until liquid thickens.
Serve with Sour Cream, Shredded Cheese, and tortilla chips if desired.
Leftovers can be saved in refrigerator for up to a week.
