Ingredients

1 onion, finely chopped

1 green pepper, seeded and chopped

2 cloves fresh garlic, chopped

32 ounces water

1/2 vegetable bouillion/lo sodium

1/16 teaspoon fresh black ground pepper

1/16 teaspoon cumin

8 ounces collard greens

Preparation

Lightly saute onion, pepper and garlic in a few drops of extra virgin olive oil. Add water/boullion with spices and shredded collard greens. Bring to a boil and then simmer about 30 minutes.

Can also add 8 ounces of black eyed peas if you wish.
