Ingredients

1 1/2 c orzo (substitution: acini di pepe)

1/3 c olive oil

2 T fresh lemon juice

1/2 t grated lemon zest

1/2 t salt

1/8 t coarsely ground black pepper

1 clove garlic, crushed

1 medium carrot, diced

1 1/4 c green, red & yellow peppers, diced

1/2 c cucumber, seeded and diced

1/4 c scallions, finely chopped

1/4 c red onions, finely chopped

1/4 c Italian parsley, chopped

Preparation

  1. Cook orzo in boiling, salted water until tender (10 - 12 minutes). Drain; rinse with cool water.

  2. Whisk oil, lemon juice, lemon zest, salt, pepper and garlic until blended. Toss vegetables, orzo and dressing together. Serve warm or at room temperature.
