Ingredients

1 cup stone ground corn meal (I use white meal)

1 cup unbleached white flour

2 teaspoons baking powder

1 teaspoon sugar

1/2 cup butter, melted

Pinch of salt

2 cups buttermilk

2 eggs

1 small onion, chopped

Crisco, 2 - 3 tablespoons

Preparation

Turn oven on to 400 degrees. Put Crisco in a 10" cast iron skillet, and place skillet in preheating oven (rack about 1/3 up from bottom).

Mix all ingredients together. When oven is preheated, remove skillet and pour batter into hot skillet. Bake for 30-40 minutes until it tests done with cake tester/broom straw.
