Ingredients
1 1/2-2 lb. yellow squash, sliced
1/2 cup chopped onion
1/2 stick butter
1 egg
1/2 cup mayonnaise
1/4-1/2 cup diced pimento, drained
1 tsp salt
1 tsp sugar
1/2-1 cup shredded cheddar
1/2-1 cup Pepperidge Farm Herb-Seasoned Stuffing Mix
Preparation
Boil squash and onion until tender (about 10 minutes). Drain. Mix all ingredients together, except cheese and stuffing mix. Pour into lightly greased cassarole dish and top with cheese and stuffing mix. Bake at 350 degrees for 35-40 minutes.
