Ingredients
4 eggs
3/4 cup milk
1/2 lb chorizo (or soyrizo)
1/2 cup chopped onion
1 teaspoon cumin
1 teaspoon chili powder
1 teaspoon pepper
1/2 cup shredded cheddar cheese
1 deep dish pie shell
Preparation
- Poke holes in the crust and pre-bake for 10 minutes.
- Fry up the chorizo, onion, and spices until onion is tender.
- Layer cheese and chorizo mixture into crust.
- Beat the eggs with milk in a separate bowl, and pour over the rest.
- Bake at 350 degrees for 45 minutes or until knife in center comes out clean.
- Serve with whatever taco-like accessories you enjoy: lettuce, sour cream, avocado, tomatoes, corn, salsa are all good.
