Ingredients

4 eggs

3/4 cup milk

1/2 lb chorizo (or soyrizo)

1/2 cup chopped onion

1 teaspoon cumin

1 teaspoon chili powder

1 teaspoon pepper

1/2 cup shredded cheddar cheese

1 deep dish pie shell

Preparation

  1. Poke holes in the crust and pre-bake for 10 minutes.
  2. Fry up the chorizo, onion, and spices until onion is tender.
  3. Layer cheese and chorizo mixture into crust.
  4. Beat the eggs with milk in a separate bowl, and pour over the rest.
  5. Bake at 350 degrees for 45 minutes or until knife in center comes out clean.
  6. Serve with whatever taco-like accessories you enjoy: lettuce, sour cream, avocado, tomatoes, corn, salsa are all good.
