Ingredients

4 to 6 lamb shanks

1 large onion, chopped

1 shallot, chopped

1 red pepper, chopped

2 large cans diced tomatoes

1 can chicken broth

2 stalks celery, chopped

1 can artichokes (in water), chopped

Preparation

Brown lamb shanks in Bertolli Olive Oil

Place all ingredients in crock pot or slow cooker. Cook on low for 8 hours.

I like to de-bone the shanks before serving. Serve over rice, either white or brown. Enjoy!
