Ingredients
1 lb of fresh bay scallops
1 lb of fresh homemade fettucini…(I use the spinach flavor because the green color is nice in this one!)
1 8 0z. pkg of frozen peas, thawed
2 cups of your favorite Alfredo sauce, at room temperature.
Freshly shredded parmesan cheese
Preparation
Saute scallops in butter and chill in regrigerator until cold. Boil fettucini until “al dente”. Strain and place in metal bowl. Add peas and scallops. Pour alfredo sauce over mixture and fold together ingredients. Chill for several hours or ovenight. Add more sauce if necessary. Serve in beautiful pottery bowl topped with fresh parmesan. Awesome!!!
