Ingredients
1 green zucchini
1 clove fresh garlic
1/2 small onion
olive oil
Preparation
Heat some olive oil in a skillet. Add the onion, chopped, and garlic, minced. Cook until lightly browned.
Cut the ends off the zucchini but no more of the skin than that. Slice the zucchini lengthwise, and chop into ~3/4 inch pieces.
Cover and let it “self-steam” until the zucchini is soft (you may need to add a little water). Uncover and let brown.
Serve hot.
