Ingredients

1/2 large head green cabbage,(or about 3 cups) finely shredded

2 large carrots, finely shredded

3/4 cup best-quality light mayonnaise (Helman’s)

2 tablespoons creme fraiche or regular sour cream

2 tablespoons grated valencia or any sweet onion onion

2 tablespoons sugar, or to taste

2 tablespoons white wine vinegar

1 tablespoon dry mustard

2 teaspoons celery seed

1 teaspoon Louisana Hot sauce or Tabasco

1/4 teaspoon salt

1/4 teaspoon freshly ground pepper

Preparation

Combine the shredded cabbage and carrots in a large bowl. Whisk together the mayonnaise, creme fraiche or sour cream, onion, sugar, vinegar, mustard, celery seed, hot sauce, salt, and pepper in a medium bowl, and then add to the cabbage mixture and combine. Season with salt and pepper to taste.
