Ingredients

5 ounces spaghetti (1/3 box)

1 shredded carrot

1 cucumber, diced small

4 ounces tofu, cubed

1/4 cup roasted cashews

1-2 T canola (olive) oil

1-2 T fresh lime juice

2 t sesame oil

1/2 t kosher salt

Preparation

Cook spaghetti according to package directions, drain and rinse with cold water to cool. Toss with other ingredients. Chill (ideally overnight) to meld flavors.
