Ingredients

Steam green beans on steamer rack in large saucepot 6-7 minutes. Transfer to bowl of ice water.

Whisk lemon juice with salt and pepper in large mixing bowl. Gradually whisk in olive oil.Stir in mint.Drain beans and pat dry. Add shrimp, cucumber,beans and onion to dressing mixture;toss well. Line 4 individual serving plates with lettuce leaves.Divide shrimp salad mixture between lettuce-lined plates. Sprinkle each with feta. Garnish with mint sprigs, if desired. Makes 4 servings.
