Ingredients
1 cup corn kernels (2 ears)
1/2 cup tomato, diced small
1 scallion, thinly sliced crosswise
2 Tbs chopped cilantro
1 Tbs lime juice
Salt
Pepper
Preparation
In a large bowl, combine all ingredients. Season to taste with salt and pepper.
To store, refrigerate in an airtight container, up to 1 day.
