Ingredients
1 14oz can of shoepeg(white) corn, drained
1 can black beans - drained
2 stalks of celery finely chopped
3-4 green onions, chopped
1/4 cup fresh cilantro - chopped
4 oz or more of feta cheese
Marinade
1/3 cup olive oil
1/3 cup cider vinegar
1/4 cup sugar
Preparation
Whisk together marinade and then add to salsa mixture. Can be made ahead. Serve with scoop chips.
