Ingredients

2 2/3 cup. fresh (or roasted) corn kernals

1 P. basket cherry tomatoes

4 celery stalks chopped

1/2 cup. red onion

1 bag arugula or spring mix

1 cup blue cheese

avacado

Dressing:

2 T. balasmic vinegar

1/3 olive oil

Preparation

Toss all veggies together and toss with dressing just before serving.
