4 oz. slab of bacon, diced small

2 C leeks (white only)

2 C shucked corn

2 each red bliss, medium dice

2 oz. flour

4 C milk

1 C light cream (optional)

Fresh ground black pepper to taste

Roasted red pepper, diced, for garnish

1 T parsley, minced

Over medium-low heat, render the bacon until crisp; do not allow fat to darken. Remove bacon and reserve.

Saute onion and celery in bacon fat until soft. Add corn and potatoes and continue to sweat until potatoes are soft.

Add the flour; blend thoroughly and allow to cook for 2 minutes.

Add reserved bacon, milk and cream; heat through and bring to a simmer. Season with the pepper.
