Ingredients
1 lb pork belly, Diced
2 lbs chicken breasts, Cubed
2 cups yellow onions, Diced
2 cups red potatoes, Diced
2 cups celery, Chopped
2 cups carrots, Chopped
3 cups frozen corn
1 (10 3/4 ounce) can condensed cream of celery soup
1 (10 3/4 ounce) can condensed cream of mushroom soup
2 (14 1/2 ounce) cans chicken broth
1 cup half-and-half
Preparation
Set skillet to Medium-High.
Add Pork Belly to skillet. Cook until browned. Remove Pork Belly, set aside.
Set slow-cooker to High.
Add Chicken to skillet with pork drippings. Cook until browned. Remove Chicken, add to slow-cooker.
Add Onion and Celery to skillet. Cook until tender. Add Chicken Broth and Soups to skillet with Onion and Celery. Cook through, add to slow-cooker.
Add Carrots, Potatoes, Corn, Thyme to slow-cooker. Stir together.
Cook in show-cooker on High 2-3 hours. Add Half and Half 10-15 minutes before serving.
Use Pork Belly as Garnish.
