Ingredients

1 cup fresh corn or drained canned corn mashed

2 eggs

6 tablespoons flour

1/2 teaspoon baking powder

1/4 teaspoon salt

pinch of nutmeg

3 tablespoons butter

Preparation

Beat eggs till light and fluffy. Mix all dry ingredients together. Add dry ingredients to eggs an mix until smooth add corn. Melt butter in a non stick skillet. Add the batter with a tablespoon. Cook until brown and then turning over. Serve with maple syrup.
