Ingredients

1 egg

1/2 cup milk

1 tablespoon organic shortening

1 1/2 cups whole kernel corn

1 cup flour

1 tablespoon sugar

1 teaspoon baking powder

1/2 teaspoon salt

2 tablespoons olive oil

Preparation

Drain and cook corn, Beat egg with milk, then stir in organic shortening and the corn. Add combined dry ingredients and stir just enough to evenly distribute the ingredients.

Oil a skillet on the stove. Drop mixture from a spoon. Fry for about 4 minutes, until brown and done in the middle. Serve hot.
