Ingredients

1 cup all purpose flour

1 cup yellow cornmeal

1 tbsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1/4 cup sugar

1 stick (8 tbsp) butter, melted

1 cup buttermilk

1 large egg

Preparation

Put all the dry ingredients into a mixing bowl and whisk to blend. Put all the wet ingredients into another bowl and whisk to blend. Pour the wet ingredients over the dry and mix together, stirring only until everything is moistened (it’s ok if there are a few lumps.) Then spoon the batter into the muffin cups. Could add in corn, diced jalapenos or chili powder for an added kick.
