Ingredients

1 cup corn meal

1 teaspoon salt

1-2 tablespoons sugar, syrup, or honey

1 cup boiling water

1 egg

1/2 cup skim milk

1 tablespoons canola oil

1/2 cup flour

1 tablespoon baking powder

1/2 cup frozen corn, thawed

Preparation

Mix together corn meal, salt, and sugar (or syrup/ honey). Slowly stir in boiling water. Cover and let stand 10 minutes.

Mix egg, milk, and oil. Add to corn mixture when it is ready.

Stir in flour, baking powder, and corn. Cook pancakes on medium heat until golden brown on each side.
