Ingredients
1 cup fresh (cooked) corn kernels or 11 oz. sweet canned corn (use whole can if you’d like)
2 Tablespoons cilantro, minced
2 Tablespoons red bell pepper, chopped
2 Tablespoons green onions, chopped
3 ounces light cream cheese, softened
2 Tablespooons light sour cream
1 Tablespoon mayonnaise
1 Tablespoon lime juice
1 teaspoon jalapenos, minced, or 1 Tablespoon mild chili peppers, diced
Preparation
Gently mash 1/2 c. cooked corn kernels with fork. Keep other kernels whole. In a bowl, mix softened cream cheese and sour cream until smooth. Add mayonnaise and lime juice and blend well. Add corn and remaining ingredients and mix. Chill and serve with tortilla chips (Scoops are best).
