Ingredients

Corn Relish:

3 cups corn kernels, cut from about 4 ears corn, or frozen corn defrosted

1/3 cup diced green bell peppers

1/3 cup diced red bell peppers

1/4 cup diced black olives

1/2 cup diced red onion

1/3 cup fresh basil vinaigrette

Salt & pepper

Basil vinaigrette:

1/3 cup balsamic vinegar

1/3 cup red wine vinegar

1/2 cup chopped fresh basil leaves

1 tablespoon minced garlic

1 tablespoon minced fresh tarragon

2-4 teaspoons chili paste w/ garlic

1/2 cup olive oil

Preparation

Basil vinaigrette: Combine vinegars, basil, garlic, tarragon, & chili paste in food processor/blender. With machine running slowly, add the olive oil. Chill until ready to use or up to overnight. Can use the remainder of the vinaigrette as a marinade for meat.

Corn relish: Combine all ingredients in a bowl. Cover & chill until ready to serve or up to 4 hours.
