Ingredients

2 x corn on the cob (cook in microwave for 10 mins)

1 x Avocado (cubed)

1 x Tomato (diced) (you can use about 1/2 a punnet of Cherry Tomatoes instead, cut in half)

1/4 - 1/2 x Spanish Onion (diced)

4 tbs Coriander, roughly chopped

Juice from 1/2 - 1 lemon

Take corn off the cob and mix all ingredients.
