Ingredients
3 cans shoe peg corn
1 roast ed red bell pepper choped fine
1 bunch of scallions chopped fine 1/3 c
dressing
1/3 corn oil
1/4 c fresh lime juice
2 TBSP water
1TBSP turbanado sugar
1 tsp salt
2 tsp ancho chilli pepr
3 TSP fresh cilantro
2 cloves pressed garlic
1/4 tsp pepr
1/4 tsp red chipolte pepr sauce
1/4 tsp chili
1 c pace med salsa
Preparation
mix up dressing - spices wi water in a sm bowl. Let stand for 5 min, add lime juice, oil, sugar, and salt. Whisk and set aside add remaining salt and salsa and serve.
