Ingredients
1 1/2 cups corn, fresh or frozen (thawed)
4 plumb tomatoes, seeded and finely diced
1 jalapeno pepper, seeded and finely diced
1/4 Med Red Onion, finely chopped
1 tbsp chopped fresh cilantro
2 tsp fresh lime juice
1 tsp Olive oil
a pinch of White, Black and Cayenne pepper
salt to taste
Preparation
Toss the fresh or thawed corn in the Olive oil
Place the corn in a very hot fry pan to lightly char one side, then cool.
Mix with all other ingredients and chill before serving.
