Ingredients

• fresh corn on the cob

• fresh cilantro

• 1 small can Adobe-style Chipotle peppers

• coarse sea salt and coarse fresh-ground black pepper

could add black beans, chopped red or green bell peppers, celery

Preparation

Boil corn. When cool, slice bottoms and stand vertically on a cutting board. Slide knife down to remove kernels.

Chop cilantro leaves. Remove 2-5 peppers (depending on how muh heat you want) and slice open - scrape out seeds. Chop finely. Mix all + add salt + pepper to taste
