1/4 Cup Orange Marmalade

1 Tablespoon Orange Juice

2 Teaspoons Grand Mariner

Directions:

Combine marmalade, orange juice and Grand Mariner. Bring it to a simmer and thicken. Use to coat hens or duck during last 15-20 minutes of roasting or serve on the side.

Preparation

preheat oven to 350 degrees. salt and pepper hens inside and out. Stuff quartered orange inside hens, along with one sage leaf. Cook hens 40 minutes, then put glaze on, cook another twenty to thirty minutes, reserve rest of glaze, and drizzle over.
