Ingredients
Marinade cubes of tofu (1 package) overnight in soy, sesame oil, ginger, pepper and cider vinegar.
Chop 1 head fennel and shred 1 small Nappa cabbage. Chop and add: yellow pepper, 5 radishes, and 1/2 cucumber.
Pack each garnish separately and mix in with dressing at serving time:
-pan roasted sliced coconut,
-ground salted peanuts
-lime wedges
-bean sprouts or chopped fresh bamboo shoots (available at Asian groceries)
-1/3 cup crumbled feta
Two dressing options:
1/4 cup yogurt, curry powder, 4tbsp cider vinegar, 1/4 cup of oil (mix oil in last)
or
bottled or homemade peanut sauce (thin enough to pour)
