Ingredients

1 cut-up Frying Chicken

1 Tbs parsley, chopped

1/4 cup Butter

1 tsp salt

1 medium Onion, thinly sliced

1 tsp curry powder

1 large Bell Pepper,chopped

1/2 tsp white pepper

1 clove Garlic. crushed

1/2 tsp thyme

2-1 lb cans tomatoes

1/4 lb blanched almonds

Preparation

Brown chicken in butter or oil. Put into a heavy casserole. Brown onion, pepper, and garlic in 1 Tbs butter. Add tomatoes and simmer 10 minutes. Add parsley, salt, curry powder, pepper, and thyme. Simmer 5 minutes more. Pour over chicken in casserole. Cover with foil. Cover with tight lid. Bake at 350O for 45 minutes. Add almonds to sauce in pan and pass to be spooned over rice.
