Ingredients
1 pie crust
1 pound breakfast sausage
1 onion chopped
1/2 pound Swiss cheese
1 Tbsp flour
4 eggs
1 1/2 cups light cream
1/2 tsp salt
1/4 tsp pepper
1/4 tsp nutmeg
2 Tbsp parsley
1/2 tsp sage
Preparation
Cook sausage until brown. Drain reserving 2 Tbsp of oil. Saute onion until clear.
Put into pie shell reserving 1/4 cup Place cheese in bowl, add onion, sprinkle with flour. Pour over sausage in pie pan Beat eggs, cream and seasonings in blender. Pour over meat and onion. Sprinkle with reserved sausage Bake 350 for 35-45 min until center is set. Do not overbake as custard will set as it cools.
