Ingredients

800g courgettes, diced

2 potatoes, diced

1 onion finely chopped

250g bacon

1 tsp fresh basil

100g goat’s cheese

Preparation

Place diced courgettes, potatoes, onion and bacon in a large pot of water. Add basil and seasoning. Bring to the boil and simmer untill vegtables are cooked. Add goat’s cheese and simmer for a further 5 mins. Remove 1/2 of the liquid and blend the remaining vegtables. Simmer for another 5 mins and serve warm.
