Ingredients

1c whole wheat cous cous

1/4 t salt

1/4 t pepper

1/8 t cinnamon

3 T extra virgin olive oil

3 T lemon juice

1 & 1/2 t minced garlic

dash sugar

1/4 t salt

1/4 t pepper

1/3 c chopped mint

1/4 c sliced scallions

1/8 t smoked paprika

15 oz can chickpeas

1 chopped tomato

3/4 c crumbled feta cheese

Preparation

Place cous cous in a bowl with 1/4 t salt, 1/4 t pepper and 1/8 t cinnamon. Stir in 1 cup boiling water and cover for 10 minutes. Uncover and fluff with fork. In a separate container, combine olive oil, lemon juice, minced garlic, and sugar. Add to cous cous. Then add 1/4 t each salt and pepper, mint, scallions, paprika, chickpeas, tomato and feta.
