Ingredients
1 cup dry cous cous
1 English cucumber (finely minced with skin on)
1 red pepper (chopped)
3 green onions (scallions)(chopped)
1 can kidney beans (drained + rinsed)
1/4 cup roughly cut fresh mint leaves
light dressing & seasoning to taste
Preparation
Cook 1 cup of cous cous according to directions. Stir and break-up cous cous with fork and allow to cool for 10 minutes. Add remaining ingredients. Served room temperature - great the next day too!
