Ingredients

1 10 Oz Pkg couscous

1 15 oz can Black beans, drained and rinsed

1 C Papaya, peeled and diced

1 C Spinach leaves, shredded

1 Green onion, minced

2 Tbl Lime juice

2 Tbl Olive oil

1/2 tsp Ground cumin

1/4 tsp salt (optional)

1/8 tsp Cayenne pepper

1/4 C Chopped smoked almonds

Preparation

Prepare couscous according to package directions omitting butter or loive oil. Transfer to large bowl. Cool 10 minutes.

Stir in remaining ingrediants, except almonds. Mix well

Transfer to serving paltter; sprinkle with almonds.
