Ingredients

1 c. couscous, cooked

juice of 4 baby lemons

1/2 c. olive oil

1/2 c. mint, minced

1 cucumber, peeled and seeded

2 tomatoes

16 black olives

1/4 c. golden raisins

1 avocado for garnish

Preparation

  1. Prepare couscous according to package directions and chill.
  2. In a large bowl, combine olive oil, lemon juice and mint. Season with salt and pepper to taste. Toss in the prepared couscous.
  3. Dice one of the tomatoes and cucumber. Add to the couscous along with the raisins and olives. Toss gently.
  4. Line the serving bowl with the couscous, slice the remaining tomato and the avocado in wedges to garnish.
