Ingredients
1 cup cooked israeli couscous
2 tablespoons crumbled feta cheese
1 small chopped tomato
1 teaspoon fresh chopped parsley
1 teaspoon olive oil
1/2 teaspoon lemon juice
Salt
Fresh ground black pepper
Preparation
In a bowl mix the couscous with the tomato, parsley and feta cheese. Add salt, pepper and the olive oil, mix well. Add the lemon juice and chill for about 45 minutes before serving.
