Ingredients
1 1/2 C water
2 T olive oil or unsalted butter
Salt
1 C quick cooking couscous
1/3 C chopped mixed dried fruit
1/4 c chopped fresh mint, flat leaf parsley, or cilantro or a combination of these
3 T pine nuts, toasted
Preparation
- Boil water, oil (or butter) and 1/2 t salt. Turn off heat and stir in the couscous and dried fruit.
- Cover and allow water to be absorbed (about 15 minutes).
- Fluff couscous and stir in herbs and pine nuts. Serve hot or warm.
