Ingredients

1/2 cup water

1/3 cup uncooked couscous

1/8 tsp salt

1/4 cup chopped roasted red pepper

1/4 cup canned artichoke, chopped

1/4 cup fresh mozzarella balls

1 Tbs chopped fresh basil

1Tbs balsamic vinegar

1 tsp olive oil

2 kalamata olives, pitted and sliced

pepper

Preparation

Bring water to a boil, stir couscous and salt. Remove from heat, cover and let stand 5 min. Fluff with a fork.

Add bell peppers and remaining ingredients.
