Ingredients

Cowboy salsa

1 can or two fresh ears corn, drained

1 can blackeyed peas, drained and rinsed

2 tomatoes, diced(can add more)

2 avocadoes, diced

2-3 green onions, chopped

1 clove garlic, minced

1 tsp. Cumin

1/4 cup olive oil

1/4 cup red wine vinegar

3/4 tsp. Salt

Pepper

Preparation

Mix together and refrigerate until ready to eat.  Serve with tortilla chips.
