Ingredients
1# lump crab meat
1/2 c. bread crumbs
2 eggs
1/4 c. mayo
2 t. Old Bay seasoning
1/4 t. pepper
2 T. Worcestershire sauce
1 t. dijon mustard
1 t. lemon juice
1 T. fresh chopped chives
2 T. butter
flour
Preparation
Mix together eggs, mayo, Old Bay, pepper, Worcestershire sauce, lemon juice and mustard until creamy.
Add bread crumbs. Mix well.
Add crab meat and chives.
Shape into small cakes. Let sit in fridge 30 minutes.
Preheat broiler. Place cakes on cookie sheet. Brush with melted butter and sprinkle with a little flour.
Cook, turning once, until golden.
Serve with remoulade sauce.
