Ingredients

1 cp mayonnaise

8 scallions thinly slice

4 large, lightly beaten eggs

4 tbsp Dijon mustard

8 tsp fresh lemon juice

6 tsp Old Bay seasoning

4 lbs lump crab meat

5 cps Panko crumbs

4 tbsp thinly sliced chives

1 tsp Kosher salt

1/2 tsp freshly ground black pepper

8 tbsp vegetable oil

Preparation

Whisk first 7 ingredients in large bowl. Fold crab into mixture. Mix crumbs, chives, salt & pepper. Stir into crab mixture. Form into 16 1" patties. Put in refrigerator for at least 10 minutes. Butter bottom of 2 (14 x 9) baking pans. Add 8 patties to each pan. Bake at 375 deg for 20 minutes. Turn each patty over. Bake again for 15 minutes.
