Ingredients

1 lb fresh lump crab meat

1/4 c dry bread crumbs

3 green onions, chopped

1/4 c chopped parsley

1/4 t salt

1/4 t cayenne pepper

1/4 t pepper

1/4 to 1/2 c mayonnaise

Bread crumbs for coating

2-3 T olive oil

Horseradish sauce

1/2 c sour cream

1/4 c mayonnaise

2 T horseradish

Preparation

Combine ingredients through pepper in a bowl and mix well. Add 1/4 c mayonnaise, or enough to bind, and mix well. Shape into 6-8 patties. Coat with additional bread crumbs. Fry in heated oil in nonstick skillet over medium heat for 2-3 minutes on each side or golden brown. Drain on paper towels and serve with Horseradish Sauce.

Sauce: Combine ingredients in a bowl. Chill until ready to serve.
