Ingredients
1 cup Dried Cranberries
1/2 cup Chopped Onions
1-1/2 cups Dry Bread Crumbs
2 tsp Melted Butter
2 tbsp Sliced Almonds
1 tbsp Chopped Garlic
1/2 tsp Red Pepper Flakes
2 Egg
4 Pork Chops (about 1-1/2" thick)
3 tbsp EVO
Salt & Pepper to taste
8oz Apple Juice
Goats Cheese
Preparation
In a large bowl mix cranberries, onions, bread crumbs, butter, almonds, garlic, red pepper flakes and eggs. Transfer the mixture to a 9x13 baking dish
Butterfly the pork chops and stuff mixture into the chop. Drizzle EVO over the top, salt & pepper to taste and Sprinkle Goats Cheese over all chops.
Bake, covered for 45 minutes at 325 degrees. Remove foil and bake 15 more minutes uncovered or until internal temp of chop reaches 165 degrees.
