Ingredients

1 cup Dried Cranberries

1/2 cup Chopped Onions

1-1/2 cups Dry Bread Crumbs

2 tsp Melted Butter

2 tbsp Sliced Almonds

1 tbsp Chopped Garlic

1/2 tsp Red Pepper Flakes

2 Egg

4 Pork Chops (about 1-1/2" thick)

3 tbsp EVO

Salt & Pepper to taste

8oz Apple Juice

Goats Cheese

Preparation

  • In a large bowl mix cranberries, onions, bread crumbs, butter, almonds, garlic, red pepper flakes and eggs. Transfer the mixture to a 9x13 baking dish

  • Butterfly the pork chops and stuff mixture into the chop. Drizzle EVO over the top, salt & pepper to taste and Sprinkle Goats Cheese over all chops.

  • Bake, covered for 45 minutes at 325 degrees. Remove foil and bake 15 more minutes uncovered or until internal temp of chop reaches 165 degrees.
