Ingredients
3 cups clean cranberries (one bag ocean-spray)
1 cup honey or more to taste
1/2 cup water
1 medium navel orange
1 tsp ground ginger
Ground cloves to taste
Ground cinnamon to taste ( I use 1 tsp)
1/2 tsp. ground cardamon (crushed seeds from four pods)
(I add 1/2 tsp. vanilla extract)
Preparation
Combine cranberries, honey, and water in a saucepan. Simmer, covered, for 10 minutes, then for 10 more uncovered, stirring occasionally. Cut unpeeled orange into chunks and chop finely in food processor or grinder. Add orange, seasonings, and another 1/2 cup of water to cranberries. Simmer chutney for 20 minutes more, stirring often. Chill before serving.
