Ingredients

4 oz. fresh cranberries

3 oz. butter

4 oz. brown sugar

6 oz. water

1 egg

1 1/2 teaspoons baking powder

1/2 teaspoon baking soda

1/4 teaspoon almond extract

3/4 teaspoon orange extract

1 1/2 teaspoon vanilla extract

7 oz. white whole wheat flour

5 oz. cornmeal

5 oz. all purpose flour

Preparation

Pulse cranberries, butter, sugar, eggs, baking powder, baking soda, and extracts in a food processor. Mix flours in a large bowl. Add cranberry mixture and water. Bake in greased muffin tin in a 350 degree oven.
